Try dry rub followed by some cornstarch to crisp up the wings, and you can sauce the wings later on.
I was thinking of doing a similar setup without a vortex but now I’m unsure. This would be my first time doing wings. I do have charcoal baskets though so I could more reliably setup the coals in the centre. What didn’t work exactly in your case? Not enough heat distribution overall?
Need way more charcoal than that for vortex. Need a full chimney in the middle. End result looks good though!
