Grilled Lamb Kofta Rolls
Ingredients (Serves 4–6):
1 lb (450 g) ground lamb
½ cup onion, finely minced
1 T minced garlic
¼ cup fresh parsley, finely chopped
1 ½ tsp ground toasted cumin
1 tsp ground coriander
½ tsp ground cinnamon
½ tsp smoked paprika
½ tsp chili flakes
1 tsp kosher salt
¼ tsp black pepper
3 T olive oil
4 pita flat bread
Mix all ingredients in a large bowl until just combined. Avoid over mixing!
Spread ½ cup of lamb mixture onto a pita. Roll up and skewer a 1 inch section until you have sliced the whole pita. Brush with oil. Place onto a preheated grill. Cool for 5 minutes over medium heat. Gently turn the skewer and cook for another 5-10 minutes. Aim for uniform browning and cooking.

With shredded iceberg
Yogurt Tahini Sauce
½ cup plain Greek yogurt
2 tbsp tahini
1 clove garlic, finely grated or minced
1–2 tsp honey
1 tsp lemon juice
Salt to taste
a splash of water to thin, if needed
