Excuse my bad English it’s not my first language I will try my best to explain my experience so far in the kitchen as an apprentice

It’s been 5 months in the kitchen I’ve learned a lot of cooking techniques I know the different methods of cooking and when to apply each and how, the cutting skills is so far not at it’s peak but at least I know how to handle a knife the thing is with my focusing I tend to forget what the chef asked me to do and some of the very important informations while he/she explains or showing the demo so I keep asking the chefs and other apprentice what did they asked us to do what information did they mentioned? but when I come back home I recall everything even the tiniest details they mentioned it’s frustrating not only that, the multitasking skill I’m really bad at it although when I cook at home I know how to manage each thing I’m cooking but why In their kitchen I seem confused and I don’t know what to do, the plating %*&$ I’m sooo bad at plating to the point I repeat the same style I don’t give myself a chance to create something unique and creative. I’ll attach some pictures of my plating Is it because I lack confidence? Or Am I afraid of failure?

    Maybe with the plates that have a smaller ring in them just fill the whole thing out so it looks more even especially on that paella. And I also think there is too little food for the quality of it it seems

    Like a lot of others in this sub you need to focus on your technique before caring about your plating. You have to learn to walk before you can run.
