





I work for a small wing chain in Wisconsin and part of my job is coming up with Limited/Seasonal sauces… and it’s so fun and absolutely amazing to get paid to make and eat wings.
1-3 are an enchilada wing
4 is a “graveyard” or “suicide” wing. Basically an equal amount of all of our sauces mixed.
5 is a creamy taco (def need a different name for that)
6 is a hot Pineapple
I think the pineapple was my favorite but basically all of them are “keepers” with a little tweaking.
Also in case anyone gets bothered: I’m the only one eating them so that’s the reason for the lack of gloves etc. this is my experimentation phase if they “pass” my test then I’ll have a few others sample them and make some tweaks and then hopefully eventually do a limited run of each.

I would not be able to work at this establishment. The “loss” the business would incur with me on the line would be fireable.

The graveyard or Hot Pineapple sound the best. The others are interesting and sound worth a try

Ok so, there’s a style of wing invented in St Louis called trashed. Basically cook a wing, cover it in buffalo then refry it for a minute. It’ll ruin the fryer oil so it requires a separate one (may be a dealbreaker) but it’s fantastic

Cheese on wings???
Try habenero pineapple. I used to make hot sauce from time to time, and I was surprised by the flavor. Different type of vibe than mango habenero
I do something similar. My restaurant has 2 dedicated wing nights. I get to come up with the featured sauces. I’m running peach bourbon this week 😋. If you ever wanted to exchange ideas I’m always looking and I have quite a few of my own.
I can’t decide if “Creamy Taco” is the best or worst wing sauce name I’ve ever heard.
Wings look awesome, but the pre shredded cheese on a wing is a huge no no for me.
