What insert do you have?
blackstone owner here. My favorite thing about owning a griddle is the superior sears on steaks. The 2nd side of a steak on a cast iron pan is never as hot because the first side has cooled it, and having a bigger surface area to sear the second side on a fresh part of the hot griddle is everything for sears.
