Did a homemade dry BBQ rub over night. 225F for a couple hours and then cranked it in 25F increments, letting it cook for 20min at each point before moving up, until 160F. Made soft corn tacos and Mexican style slaw.

I can’t describe the difference going from a $125 rough tiny smoker that couldn’t maintain temp with coaxing and cussing to this rig. So easy. Loving it from the start.
