


First crack at Basque Cheesecake
The biggest thing I learned from this is to let it sit for longer than you think. I know all recipes say aim for overnight but we were eager and after an hour or so on the counter then 4 hours in the fridge, I was disappointed but then I ate it again the following morning and it was way better.
The recipe I followed said to cook at 400 F for 45 minutes but the difference of ovens really does matter as at the 45 minute mark my cake was hardly brown on top. I left it about 20 minutes longer for the top to caramelize but then the interior cooked more than I hoped as well. I was shooting for the molten style.
Definitely gunna give this another shot!
