Feeling fancy tonight: Mushroom risotto with steak (vegan for me, real for bf)

    Not quite a recipe, because I eyeballed everything and had to prep more stock during, but here we go:

    I cooked the mushrooms first and separately (enoki and king osterys), reheated at the end to serve warm.

    The vegan steak is Juicy Marbles, I like it a bit more brown, so I cut it before cooking.

    The risotto is pretty standard: sauteed onion and garlic, added arborio rice to the pan, mixed everything and started to add mushroom stock (yes, store-bought) and to stir for about 30 minutes; added parmesan and freshly grated pepper at the end, right after removing from stove; garnished with chives and the reheated mushrooms.
