Family Fermented sweet pickles

    #Sweet Pickles(14 day)
    Into a clean stone jar put 2 gal. of cucumbers, washed & ~~drained~~ sliced lengthwise. Regardless of size, cucumbers must be sliced or they will shrivel. Dissolve 2 cups of salt in one gal. of boiling water & pour while hot over pickles. Then cover & weight down pickles & let stand 1 week. On 8th day drain then pour 1 gal. of boiling water over then & let stand 24 hours. On 9th day drain & pour 1 gal. of boiling water with one tablespoon of powered alum over pickles & let stand 24 hours. On Following day, or tenth day, drain again & pour 1 gal. water over them & let stand for 24 hours & drain.

    For pickling mixture combine 5 parts of vinegar boiling hot, 6 cups of sugar, ½ oz. (5 teasp.) celery seed, 1 oz., (3 tablespoon) broken cinammon sticks. Pour this over the pickles. Drain off for 3 mornings, add 1 cup sugar each morning. Repeat & pour back over pickles , with 3th & last heating pack pickles into sterilized jars. Cover them with boiling syrup & seal at once.
