



Ordered a wagyu brisket and it looks like this out of the pack.. Am I tripping or is it not supposed to look like this? It has a really deep cut, and a big flap, and many small flaps and the fat is not even or consistent at all. What do I do? How do I trim? This is only my second ever brisket. Any help will be much appreciated

That is a rough looking brisket cut. Hate to say it. I’ve never seen one come with “flaps” like that. That is going to cook really unevenly unless if you cut them off.

Where did you order that from? Needs lots of trimming. Bright side is you’ll have a lot of delicious tallow to make.
Cut the fat for tallow where it’s obvious, take the flaps and just trim them for sausage or stir fry. Kind of a shame though.

I learned trimming using this video. However the briskets I get usually come in a much better starting shape than this one. It looks like there is a giant cut in it as well.
Yeah, you’re absolutely going to have to trim a fair amount of that off if it’s going to end up on the smoker-needs to be as close to uniform in size and thickness as you can get it

Looks a bit rought, agreed. But to save a good part of it, you could probably tie up that deep cut, at least. Use baking/butchers string. The smaller bits I’d use for a burger grind or something.
Worst case you trim it more and save the cuts for burgers

I would return this brisket, it’s a horrible job by the butcher.
I can’t really judge but it doesn’t really look like Wagyu to me
