• Cooked lobster meat, chilled and cut into small chunks (I use kitchen scissors) • Mayo – I used half light mayo, half regular. You can adjust the mayo level to your liking, I think I used around 2/3cup for 1.5+lb of meat. • Lemon zest and a hefty squeeze of lemon juice • Little bit of season salt & black pepper
– Mix altogether and let chill in the fridge for a bit. Pan-fry some rolls with a generous amount of butter until golden brown. I use the Frankfurter/New England style rolls. Then just add as much meat as your heart tells you to.
