I’ve reimagined a classic s’mores with the elevation of fine dining. Russett, oat, and buckwheat crumb, oak smoked chocolate cremeux, bourbon marshmallow fluff, meringue sticks, and wafer paper to garnish and orange sorbet to serve on side.

    Chef, honestly: with all of the love in my body for how well everything is thought out, I can taste the description and photo, I can smell the smoke and sulphur, I can imagine pissing my pants with absolute joy getting this put in front of me as a diner with the cleverness and how much I enjoy building my own fork-full of a finished piece of actual art… I would probably turn to whomever is at the table and ask “Hey; has anyone here seen the film, ‘The Menu? Remember the ending?'”

    This is epic. Truly original, instantly gets the OMG reaction from everyone at the table, and I bet it tastes spectacular, too. Not too sweet, perfect balance of flavors.

    Plus, that oak smoked cremeux in combination with the bourbon fluff is genius.

    I’m no chef, just someone who loves eating food (so take my advice with a grain of salt):

    I would love to see the sorbet make it onto the main plate rather than as a side dish. Perhaps the crumb could act as dirt, but I’m not sure how to play the sorbet.

    As someone who is bored of constant reiterations of s’mores, I think this is stunning and if I saw someone receive this near me in a restaurant I would order it immediately. It not only looks like art but the flavours and textures sound divine.
