    Accidentally damaged the texture of the fish by some tough rinsing so the cuts are thicker than I aimed for.

    Not too shabby. You definitely need a finer cut on the fish and I’d etoast the pine nuts.

    Cuts on fish and dill are sloppy. Garnished without intention, and much too heavily. Plateware is terrible and needs a wipe badly. Flavors show some potential, but this is plating so we can leave that alone.
