Hell yeah, chef. All three are great, but it’s 2 – 1- 3 for me. If I had any comment, it would be to maybe have a larger plate for 2 and have it lined up off center.

I like 2 the best but I would prefer it if elements were grouped together rather than scattered around. Halibut in one spot, mushrooms in a different spot, potato in another spot with the sauce to tie them together.

Just depends on your style or restaurant I guess. Both work and are absolutely beautiful. You are a very talented individual. The food itself looks absolutely delicious and it would be a privilege to get a chance to try something like this.
