I wanted to do a corn macaron, did you just sub corn flour for almond? Any corn powder in the mix?

From an artistic standpoint, if you’re setting an edible item on a surface, it should be edible or serviceware. This is close to non-functional garnish. Something like a piece of clear acrylic separating the macaroon would do the trick.
From a practical standpoint, if you have dealt with the public long enough, you know it’s just a matter of time before some moron eats an uncooked popcorn kernel and possibly chokes. Your owner will not be happy.

As a Mexican who grew up eating elotes, this is fantastic. I love seeing corn dishes and desserts, I wish I could try it.
