Help. Filet with potato puree, miso pea puree and whipped potatoes

    first thing’s first; it’s a meat plate. meat should be the centerpiece. right now the center of the plate looks like a sewage alcove(not in a mean way lol) if you’re going to go off-center, you should utilize negative space and leave some areas empty

    your greens and oranges are not vibrant enough to pull off the ‘puddle’ going on, if you will. be more deliberate with your ‘oil spill’, like try three asymmetrical dots and go from there.

    conversely try making two clean swooshes of each puree/sauce and build from there, focusing on ‘staying in the lines’. and not lines like borders, but the visual lines of the plate.

    it looks like you didn’t cheesecloth & boil out the extra water from your green oil when you made it.

    the snap peas look like they’re on a smoke break out back while the onions are just kinda hanging out together. you should be able to construct a bite of each element easily, and this has one doing alot of gathering around the plate for a bite.

    add another potato, build little islands nestled on puree/sauce swooshes and dot your oils a bit more conservatively.

    the flavors and profile of this plate is awesome, keep at it!
