Looks very nice. Assuming the dots are also the brown butter creme cheese frosting, it may look even cleaner without the dots

It’s a good attempt but the hazelnuts with the smear look like a runway. The ratio of soft texture components is off. The smear could be to the side the hazelnuts I would swap for pepitas caramelized or a pepita tuile using a mold. When plating always think about how the customer is going to eat it. It’s a great concept as we head into autumn season just needs a few minor adjustments.

I loooove pumpkin spice and love the shapes and colors! I would definitely love to eat this, though I don’t really understand the function of the praline streak (do you scrape it up?) I also think the pumpkin cake would benefit from a little extra intensity/zing, like maybe orange zest or ginger on top, or leaning into the browned butter and maybe having some crunchy salty element on top. But overall I would like one please 🙏
