🔹Apple Base
▢8 large granny smith apples – peeled, cored and thinly sliced (about ¼ inch thick slices). Other baking apples work too.
▢½ cup (100 g) white granulated sugar
▢1 tsp lemon zest
▢½ tbsp lemon juice – freshly squeezed
▢1½ tsps ground cinnamon
▢¼ tsp salt
▢½ tsp vanilla extract/essence
▢1 tbsp all-purpose flour

🔹Topping
▢1 cup (120 g) all-purpose flour
▢1 cup (85 g) quick cooking oats
▢¾ cup (150 g) soft light brown sugar
▢¼ tsp salt
▢1 tsp cinnamon
▢¾ cup (170 g) butter – cold and cubed

Okay, there is just something so magical about a warm apple crisp fresh out of the oven. And this recipe does not disappoint. Juicy cinnamon coated apples are topped with a crunchy, buttery oak crumble. Simple, cozy, and so so delicious. So, to start off, you want to preheat your oven to 180C or 350 if conventional. And we’re going to prepare our apples first. So, you’re going to need eight large Granny Smith apples. Any baking apple will work. And you want to peel, core, and slice the apples into quarter inch slices. You don’t want them to be too thin, otherwise they’re going to become, you know, super mushy once the apple crisp is done. So once all your apples are ready, you want to combine them with 100 g or half a cup of white granulated sugar, 1 teaspoon of lemon zest. Remember to only grate the top yellow part of the lemon because we don’t want the bitter white pith that’s underneath. Half a tablespoon of freshlysqueezed lemon juice, 1 and 1/2 teaspoon of ground cinnamon, a/4 teaspoon of salt, half a teaspoon of vanilla, and 1 tbsp of plain allpurpose flour. And then just give that a good mix until everything is well combined. Now once the apples are mixed well, you want to transfer them to a lightly greased 9 by13in baking dish and spread them out as evenly as you can and pop the apples aside for now while we prepare the topping. So, for the topping, you want to combine 120 g or 1 cup of plain allpurpose flour, 85 g or 1 cup of quick cooking oats, 150 g or 3/4 of a cup of soft light brown sugar, a/4 teaspoon of salt, and 1 teaspoon of ground cinnamon. And then just give that a good mix until it’s well combined. And you also want to try and break up as many of the chunks of sugar as you can. Now, once that’s done, you want to add in 170 g or 3/4 of a cup of cold cubed unsalted butter. And we’re going to press the cold butter into the dry ingredients. You can use a pastry cutter as well to cut the butter into the dry ingredients. Now, the reason that we do this is because cutting the butter into the flour creates those delicious buttery clumps that bake up golden and crisp as opposed to a topping that’s, you know, kind of greasy or flat. Now, once you’re done, your mixture should look something like this. It’ll be kind of sandy with little bits of unmixed butter, which is exactly the way we want it. And then you want to sprinkle the oat topping evenly over the apples from earlier. Okay, so once that’s all done, this apple crisp is ready to go into our preheated oven for 50 minutes or until the top is a beautiful golden brown color. And you may also see some of the apple mixture bubbling around the edges of the dish. So once the crisp is done, you just want to let it cool slightly, maybe about 15 to 20 minutes, just so that it, you know, it isn’t piping hot and has some time to firm up a little. And then it is ready to serve. This apple crisp is honestly so so comforting and delicious. It’s perfectly tart and sweet. Not too much of either.
