But a little dry. Bark is fantastic. The juicier pieces were other worldly. I liken the meat to more carnitas style. Did best to keep it at 300 deg. 2.5 hrs. Heavy rub with sugar. Caramelized bark amazingly well. Would do again, next time I’d use St. Louis, let the coals burn down a bit more to try for under 300. Also only 2 hrs. All in all definitely tasty. A bit dry but excellent bark. Very different than just smoked low and slow as expected. Forza03 7 months ago Next time try wrapping them around the spit. Would possibly allow you to do 2 racks.
