  • 2 tablespoons butter
  • 6 slices white bread

Preparation

  1. In a large bowl, lightly toss the arugula with the lemon juice, vinegar and oil. Season to taste with salt and pepper. Divide the salad among 6 plates.
  2. Remove the lobster from the marinade and arrange on top of the arugula. Garnish with snipped garlic scapes. If you have a panini maker, serve with buttered and pressed white bread — it will recall the buttery hot-dog bun that is the crux of every good lobster roll. If you don’t have a panini maker, butter the bread and then toast it in a nonstick pan over medium heat.
