Made this yesterday, still have like 80% left today. What to do with leftover roast lamb?

I made it for Canadian thanksgiving and it was delicious ([this is the recipe I used](https://leitesculinaria.com/244823/recipes-tuscan-style-roasted-leg-lamb.html)) but we failed to account for how *rich* lamb is and the fact that there is only two of us, not a whole family gathering. Roast lamb is really heavy and a lot to digest. My husband had two slices, I had 1 and we were pretty full with the sides. Now I have 80% left of a massive lamb leg and I actually really do not look forward to having more of it in its current form tonight or tomorrow as left overs.
Not sure what to do with it. In its current form, it’s a roast. Should I slow braise it with Middle Eastern spices and turn it into a doner filling or Indian spices and turn it into like a lamb pilaf or biriyani?

Same as for any roast, put some Dijon mustard on it and put it between some slices of bread, preferably rye.

Sandwiches. With gravy or mint jelly on buttered bread. Lamb with tzatziki, cucumber, and tomato would also be a solid sandwich option. You can also freeze some.

A curry, the spices definitely help with the richness issue. As does rice & a cucumber based side.

Lamb sandwich sliced very thin with mayo mixed with a bit of mint jelly. I also dice up a cup or two to make a lamb curry with onions garlic apples and pears.

The sandwich combinations are endless! But my go-to would be noodles, or some aromatic rice with feta, red onion, maybe roasted peppers or carrots etc
