Man why are people such prudes, most sushi restaurants need the deep fried drenched in sauce stuff for a big portion of their consumer base and honestly they smack at times too. Not every restaurant can be a nigiri and sashimi, omakase only place if they wanna stay open.

As a guest this would feel like a throwback to 80s or 90s plating trends. Sushi is one of those dishes where I think more simple plating is the way to go!

This looks more like a 60s/70s deviled egg in aspic party dish than sushi. Salad looks like it’s been sitting at room temp and/or is overdressed so it looks sad and slimy, knife cuts are sloppy and inconsistent (or it’s a bag salad) and do I see that you put the fibrous core from the top of the tomato in there? That’s super unappealing.
Why is there a salad on the plate with the sushi anyway?

Fuck me! 10/10 magnificence. Somebody call Jiro-sama and tell him he can retire, the torch has been passed. More sauce please chef, also love the hot stirfry garnish – more fusion please. Maybe use rice in the stir fry then use that as the rice for your rolls? Just an idea. Maybe stuff the jalapenos with the cream cheese and then fry it and use that in the roll too? Mmmm sounds good. Do you live in Japan?
