Turkish Sardine Rava Fry
Part 2 of my Jaffa Port visit.
Ingredients :
1/2 kg small sardines cleaned
1 tsp kashmiri chilli powder
1 tsp tumeric
1 tsp coriander powder
1 tsp salt
1 tsp pepper
1/2 cup semolina
Method-
Mix the fish with the spices and semolina and lay them out on a frying pan
Pour coconut oil on the fish and fry on medium high heat for 5 minutes on each side or till theyre brown
TIP- Do not fry on high heat it will burn easily.
You can use any bread to make the wrap and fill with whatever salad you like.

okay and we’re done and this looks amazing have a look okay so the fish is clean I’m going to put some salt and pepper on it okay so I’ve got salt and pepper on that I’m going to take some semolina we call this raava in Goa and I recently found out that they also fry their fish with semolina in Turkey the only difference is between turkey and and Goa is that they have this beautiful presentation in Turkey which I’m going to show you in a couple of minutes hold on I’ve got some turmeric I’ve put some Kashmir chili powder I’m going to add some coriander and uh that’s it that’s my marinade going to mix this up a bit we have two types of um raava fry dishes in Goa one is the Masala raava fry where we have a wet marinade we have ginger garlic lime vinegar this one I’m going to do a lot like they do in Turkey you want to toss this nicely in the semolina and the moisture from the fish is going to help coat it with semolina and and the spices that’s a fish ready to fry yeah this is the difference between um Goa and turkey is that in Goa we just shallow fry it whereas in Turkey they lay out the fish in this spiral and as it fries hopefully this stays together and it stays intact and um the whole pan is picked up and then it’s flipped over on itself to fry on the other side and it just it looks beautiful you really want to pack this in and there we go okay you should hopefully stay together we go beautiful sardines I’ve done my pattern and I faned out these sardines beautifully I’m very happy with it to prep while the fish is cooking I’m going to switch this on on about medium high and let it cook this is going to take about 15 minutes to cook down in the meantime I want to get my salad ready I’ve got these amazing wraps they’re called drew p um from one of the communities that live up north and they make this special flatbread that’s really really thin very thin like um rali Roe so we’re going to use that as a wrap and we’re going to have some salad to go with our fish I’ve got some rocket I’ve got some D I think I’m going to be the only one eating the D cuz my kids don’t like it and some red [Music] onion okay I want some tomato wedges cuz I love tomato these are special Maggie tomatoes that I use for my salads they’re sweet they’re Tangy they’re bursting with flavor you just want to keep keep an eye on the the fish while you’re making your salad because the semolina and the spices tend to burn before it actually Cooks so you want to make sure that it’s not it’s not getting burnt and remember we’re just shallow frying here we don’t want to add more oil the semolina is going to roast and it’s going to cook with the fish you don’t want to shake it you don’t want to move the fish around because um what’s happening right now is the fish is sort of sticking to each other um you want to let it cook slowly and it’s ready to to flip wish me luck okay I’m going to drop the plate and then flip over okay ready it’s hot and scary there we go and it stayed together this needs to slide back in now we have a win we’re going to leave this fish to cook and um get our bread ready and eat my fish is all done now and I’m going to flip it again cuz I want it on the other side I’m going to drop my plate in ready oh this is hot okay okay and we’re done and this looks amazing have a look this is way better than I imagined oh my gosh this looks so beautiful we have our beautiful spread we’re going to have some uh Dr Pita with sardine some Tom tomato onion rocket and some Bill chili flakes from Turkey it’s amazing the fish the bones are like so fine you can’t really feel the bone and all the fresh salad with it is just it’s amazing enjoy
