This is my first whole brisket.
Cooked a flat b4, overcooked it.
Cooked a point b4, bottom was dry.
So far this is the best one.

Swapped the smoked 3 times.
Hard to maintain temp but kept it around 240.
Wrapped in foil when temp got to around 160 bark was set.

Pulled around 200, was probe tender.
Rested for 2 hours.

    Use butcher paper over foil and wrap it with rendered tallow

  2. Ive never seen a prime basket at Walmart! Lookin noice!
