Raised the rabbit myself. Roughly followed the serious eats white chili recipe but did most of the cooking on the kamado after the rabbit was done.

    Good sized rabbit, California or New zeland? Rabbit is fantastic. I prefer wild cotton tail, but properly fed home raised are delightful also. Cleaning them is so much faster than chickens, as you mentioned.

    How would you describe the taste of rabbit? I’ve only had chicken, pork, and beef as far as land protein goes so im curious about the flavor in general.

    That sounds delicious. I havent had rabbit in years, the wild cottontails are tasty but little less common and harder to find then squirrels. I might try this with squirrel if i dont shoot a cottontail this year.

    I saved this. I usually get a few snowshoe hares a year. This could be a good way to use them.
