I cranked out a few tavern pies using Kenji’s method. I followed it pretty closely other than using store bought Italian sausage. This is the style of pizza I grew up eating and I was excited to give it a try. I think they turned out pretty good.

    they look good. but if you cooked them on that pan you are missing out on a lot of crisp. i don’t like how much its bending in the bottom shot.

    I see you drying it out on the parchment. Thats what I like about this pie. No hand stretching. Just roll it out . And I love the crunch.

  5. Johnsonville Sweet Italian is suprisingly good. If you want to get bougie you can add some fennel seed but it’s great right out of the package. Your pizzas look legit.
