This week’s dinners in pictures 😌 cooking meals for my tiny family brings me joy. I’m so excited for thanksgiving.

    It hasn’t been an easy week for me, but I’m still making daily dinners as it brings me immense peace and comfort. I love the holidays but also get a lot of stress at this time of year.

    The first two photos are actually dinners from the same evening – my fiancΓ© and I ate the same ingredients, prepared just a little bit differently
    My fiancΓ© wanted a ribeye, but did not want any crazy sauces or seasonings so I just did Kinder’s Truffle Seasoning and Salt-Pepper-Garlic for him. It was cooked medium – his favorite. Sides of jasmine rice and steamed broccoli.
    For myself, I wanted some korean style “bulgogi” and it may not be authentic but it was so good. The next day we did both have the bulgogi for lunch and he liked it. Sliced some steak thinly and marinated with apple (tenderizes the meat), soy sauce, rice vinegar, sugar, sesame oil, garlic and green onions. Mine was prepared as a bowl because I think the asian flavors taste great over rice. I made a sriracha mayo for the meal too. I love this meal, and especially love this marinade on beef ribs when I can get them.

    The third picture is a tasty grilled chicken and rice bowl with Chimichurri and feta. I marinated the chicken breast with greek flavors (again, not his favorite) but hey I love citrus and herbs so… oops. I love the Chimichurri as well and the rice was cooked in chicken stock. This meal is fresh and yummy.

    Fourth picture is baked wings and baked broccoli. I made an “asian zing” sauce for the wings and it was crispy and delicious. It had honey, soy, vinegar, sriracha, ginger, and garlic. I ate for lunch the next day too!

    Fifth picture is another steak meal – two reverse-seared thick cut NY Strip steaks, served with Brussels sprouts and mashed avocado. The avocados were random but would have gone bad if not used and make for a pretty healthy and good dip for the steak. I’m pretty much out of steak in my freezer and wanna buy more but trying to use up more chicken… this steak was i n c r e d i b l e. πŸ₯°

    Sixth picture is a classic in our house – chicken fajita bowls. I generously season chicken with a homemade tex-mex seasoning blend, and cook the chicken with lots of peppers and onions. I serve over cilantro-lime rice (i add a bay leaf which makes it so aromatic). I also do sharp cheddar, pico de gallo, lettuce for crunch, and greek yogurt. It’s really cheap, easy, and always goes over well in this house.

    Final picture is a bad one – I wish I would’ve had time to get a nice pic but my future MIL came over last minute and I needed a quick meal so I did homemade pizzas (plain cheese and BBQ Chicken). I made the dough from scratch and did mozzarella on the plain pizza, and used white cheddar and mozz on the bbq pizza, along with onions and pepperoncini. I really enjoyed it but could not tell if anyone else did.. 🀣 I think so though cause I got the review from a teenager “better than pizza Hut” but not as good as dominoes…
