    I love that sesame pastry cream idea . What’d you use for your sesame flavor ? Tahini or boil seeds in the cream?

    Looks fantastic! For plating purposes I get where you placed the jelly but for eating I wish the jelly fully covered the slice. It’d be more work but you could set the jelly after the pie is cooked and cooled then place the pears after it’s sliced up.

    I love the way you fanned the pears! I almost thought it was a conch shell while scrolling by. Theres a by-the-sea vibe to this plating that I really like.

    If I may make a comment, just to nitpick a little, I’d say the crust is disturbing the delicate look of the plate. I would rather have no crust like a cheesecake, or a low and trimmed one.
