Hey, I’ve got a light, crisp, fresh summer side for you. I’m going to serve this with some orange glazed salmon and a glass of perfectly chilled, crisp, refreshing Mcrell Vineyards Kylie Ryan Ross. Cheers. I had this gorgeous fennel bulb growing in the garden and it was ready to be harvested. Make sure to wash really well. The dirt likes to get in between the fennel. Okay, we’re going to set these aside cuz we’re going to use these later. The fennel needs to be sliced thin. A mandolin is a great tool. Just be careful. Give it another good rinse. Slice up whatever citrus is currently in season. Make sure to get all that pith off. That’s what makes it bitter. I sliced in little medallions, but you can do whatever works for you. Topped with some sliced shallot. They have a nice mild onion flavor. Added fennel frrawns, toasted pistachios, and some sliced avocado. For the vinegarette, we’re going to use avocado oil. Add 1/4 of a cup about equal parts champagne vinegar. Splash of red wine vinegar. It also makes the color really pretty. So, we’re not adding any sugar or agave or syrup or anything because we’re getting all this natural good sugar from the oranges. Whoa, that was a juicy one. Little pinch of salt. Little black pepper. Now I’m just going to balance it out a little bit because it’s pretty zesty. One teaspoon of a Dijon mustard. That is so good. It is so light and refreshing. Like I think I could drink this. Just kidding. I mean I think I could. Why would you ever buy a salad dressing? It’s so easy to make. Fresh ground black pepper. Little flaky salt. [Music] There she is.
