Why does this keep happening ? I have made tons of macarons with tge same recipe but the last 4 batches I made ended up with these volcano like cracked shells. Please help!

This usually happens to me when I don’t let them rest enough. You may want to try resting longer, and if that doesn’t help, try a different recipe if it’s never worked for you.

Oven temp being too high could also be the issue

Overmixing, not resting long enough and a mixture of the temperature being too high with your oven. The recipe I like best told me to have my temp at 350, but I tried 325 and it’s perfect

We just made about 1000 for thanksgiving and had that same thing happen to the first 4 batches. Wasting several hundred. With more humidity in the air then last time it didn’t take 30 minutes of rest time. It took much longer. In fact, we had the trays of Macarons spend 40 minutes of time in the dry sauna to get them dry enough to stop this exact same problem . A proofer would have been awesome.
