Bacon Egg and Cheese Rice Paper Spiral
It’s hard to beat that perfect little bacon, egg & cheese from the corner bodega when you’re in New York. It’s my go-to breakfast sandwich, and honestly…I think about them way more than I should.
I’ve done the rice paper hack before, but pairing it with a bacon egg and cheese might be the ultimate move. It’s crunchy, gooey, melty, and straight-up addictive.

Ingredients
3 rice paper sheets
5 eggs (4 for filling, 1 for dipping)
2 strips bacon or turkey bacon, cooked and chopped
½ cup shredded mozzarella
Everything bagel seasoning
Method
Start by scrambling 4 eggs until just set, soft and fluffy, not dry. Set aside.
Whisk the remaining egg on a plate — this will be your “egg dip.” One at a time, dip each rice paper sheet into the beaten egg, coating evenly. Lay them out on a lightly oiled cutting board, slightly overlapping to create one large sheet.
Layer the fillings: scrambled eggs down the center, followed by chopped bacon and shredded mozzarella.
Roll up tightly into a cylinder, sealing the edge as you go, then gently curl it around itself into a compact spiral.
Brush the top with any leftover egg and sprinkle generously with everything bagel seasoning.
Bake at 400°F for 15–20 minutes until golden and crisp.

Think I'm having deja vu
I tried making one of these spirals with egg and some leftover Thanksgiving turkey but when I tried to form it up and roll it into a spiral it ended up sticking to the cutting board and tearing a bit. Do you have any advice on keeping the rice paper whole? Much love!

I made it w ham and cheese after watching this. I just needed 1 big rice paper each. It was so yummy and my daughter says it’s her favorite breakfast now so thank you ❤ will try w scrambled eggs!
How long is the bake?
I have tried making these and dipping the rice paper in the egg is not enough to soften it, I had to also add some water
