This has to be the
prettiest salad I’ve ever made. You’re gonna want this citrus
salad for the holidays. It’s stunning and really simple to
put together. It starts with my easy lemon vinaigrette. I love
that this dressing comes together in a mason jar. You
just shake it up and it’s done, and you can totally make it
ahead. This is one of the dressings that I always have on
hand in my fridge. Now we slice the citrus. Use a sharp knife to
cut off the top and bottom, then slice away the skins. Slice into
rings and arrange your citrus on a platter. Next we have my
favorite ingredient, and that is roasted beets. I always use
gloves when working with beets, because they can stain if you’re
someone who doesn’t like beets, most likely it’s because you’ve
only had them canned. Try roasting them, and you might
just change your mind. Next, slice up an avocado and add that
to your platter, along with your citrus and beets. Sprinkle on
your pine nuts for a little bit of crunch. Then add some fresh
basil and drizzle your dressing all over the top. You’re gonna
