Wagwan , family? Welcome back to my channel. In today’s video, I’m going to share with
you how to make Oven Jerk Barbecue Chicken. First and foremost — big up, father god
Now, I’m going to show you all the ingredients I’m using for my
oven jerk barbecue chicken. These are the chicken pieces I’m
using — some lean thighs. They’re already cleaned; I just need to wash them.
We’re going to season the chicken with my homemade jerk seasoning. We have a video on the channel
showing how to make this homemade jerk seasoning. I’m also going to season with some onion powder,
garlic powder, and my Bris All-Purpose Seasoning. Ingredients for the Barbecue Glaze:
• Brown sugar • Ketchup
• Butter • Jerk seasoning
• Barbecue sauce • Pineapple juice To wash the chicken, use some salt and lime. Always use room temperature water to wash your
meat. Don’t use hot water to wash the meat, okay? Now rinse one more time. Now I’m going to season the chicken.
I’m taking two pieces out — these two pieces will not have jerk seasoning because the jerk seasoning
is very spicy. So these two pieces get no jerk. Add one tablespoon garlic powder,
one tablespoon onion powder, and two tablespoons all-purpose seasoning. For the jerk marinade, add two tablespoons also, because this is very spicy. As you can see, a lot
of pepper — I put a lot of pepper in this one. Now we’re going to massage the
seasoning into the chicken. Make sure some of the seasoning
goes underneath the skin too. This is how you want it to look — seasoned to perfection. After you season them like this, let them rest for 2 hours so the
seasoning can marinate into the meat. Or you can leave it overnight
for even better flavor. For the two pieces without jerk seasoning:
Add a teaspoon of garlic powder, a teaspoon of onion powder, and
two teaspoons all-purpose seasoning. Remember, the jerk seasoning is spicy —
that’s why I’m doing these separately. Rub the seasoning under the skin as well. Now put them to marinate in this bowl. Cover the two non-spicy pieces separately
with plastic wrap and place them on top. Now I’m going to put everything
in the fridge to marinate. It has been 2 hours since I seasoned the chicken.
Now I’m going to put them on this wire rack. My oven is preheated at 350°F.
We’re going to bake them for 45 minutes. After 45 minutes, we’ll take them
out, glaze them with the sauce, and put them back into the oven for 15 minutes. While the chicken is in the oven,
we’re going to make the glaze. Start off with half a stick of butter. Melt the butter, then add the jerk
seasoning, ketchup, brown sugar, and barbecue sauce.
Stir until everything comes together. Now pour in the pineapple juice. Let it come to a boil.
Once it starts boiling, turn it down to low heat and
let it simmer for 5 minutes. After 5 minutes, we’re going to
take the chicken out of the oven, baste them with the sauce, and
put them back in for 15 minutes. It has been 45 minutes — time to
take the chicken out and glaze them. Look at this! Brush on the sauce first, then flip
them over and glaze the other side. These ones get a lighter coat of sauce
because the sauce has a little spice. Now put them back in the oven for 15 more minutes. Time to take the chicken out.
First, I’m going to turn off the oven. Take a look!
I’m going to cut into one of them. Look how nice this is — juicy, cooked to perfection. Try the leg first — cooked perfectly. It’s sweet and spicy. If you don’t want yours
spicy, just reduce the pepper. I’m telling you — you’re
going to love this recipe. Thank you so much for watching
this video to the end. See you in the next one. Peace out. Briscoes Kitchen and Spice — the food is nice!
