GARLIC & HERB OLIVE OIL
⚬ 1 cup extra virgin olive oil
⚬ 6 garlic cloves, peeled and smashed
⚬ 1 teaspoon dried oregano
⚬ 1 teaspoon dried thyme
⚬ 1 teaspoon dried rosemary
ROSEMARY LEMON OLIVE OIL
⚬ 1 cup extra virgin olive oil
⚬ 2 sprigs fresh rosemary
⚬ 1 teaspoon lemon zest (from 1 lemon)
⚬ 3 to 4 (1-inch) strips lemon peel (just the yellow part—no pith)
CHILI & GARLIC OLIVE OIL
⚬ 1 cup extra virgin olive oil
⚬ 6 garlic cloves, peeled and smashed
⚬ 1 teaspoon crushed red pepper flakes
⚬ 1 small dried chili pepper (like arbol), broken in half
HOW TO MAKE THEM:
1️⃣ In a medium saucepan over low heat, combine 1 cup olive oil with the ingredients for one flavor variation.
2️⃣ Heat slowly for 20 to 30 minutes, until the oil is fragrant and the garlic is lightly golden—but not browned.
3️⃣ Remove from heat. Let cool in the pan for 10 minutes.
4️⃣ Strain through a fine-mesh strainer or cheesecloth into a bowl or measuring cup.
5️⃣ Use a funnel to pour into a clean bottle or jar. Discard the solids.
6️⃣ Seal tightly, label, and refrigerate for up to 2 weeks.
👉 Let come to room temp before using (it may solidify a bit when chilled).
HOW TO SERVE
🥖 Dip with crusty bread
🥗 Drizzle over roasted veggies or salad
🍝 Toss with pasta
🍗 Use in marinades or finishing oils

Infused olive oils are such a great edible Christmas gift. They look super fancy, but they couldn’t possibly be any easier to make. My favorite flavors are garlic and herb, rosemary, lemon, and chili garlic. You can make whatever flavors you want, but be sure to have containers to put it in. For any flavor using garlic, you want to take the back of a knife and gently pop that garlic clove to expose the inside. This allows the flavor to come out. All of the methods are the same. Heat one cup of olive oil. With your flavorings, so for garlic and herb, you’ll need six cloves of garlic and then one teaspoon each of dried oregano, dried thyme, and dried rosemary. Give it a swirl and heat over low heat for 30 minutes. For rosemary lemon, add two sprigs of fresh rosemary. And you may need to cut it to get it to fit down in the olive oil. And then some strips of lemon peel. And you just want to use a vegetable peeler to peel them off. This one is so good on salads and avocado toast. For chili garlic oil, add six cloves of smashed garlic, one teaspoon of crushed red pepper flakes, and a small dried chili pepper cut in half. It couldn’t get much easier than this. After 30 minutes, grab your containers, a funnel, and a fine mesh sie, and we’re going to strain out those flavor additions. Just go nice and slow. And you can always wait for the oil to cool off if you’re worried about this part. Put a lid on and add a label. Just be sure to let them cool completely before using. You can use them on a salad in place of salad dressing. You can use it as an olive oil bread dip. Super tasty. Drizzle it on your avocado toast. I mean, the possibilities are endless. There are REAL Dangers in these seemingly simple instructions. When infusing herbs into oil, only dry herbs should be used so as to not introduce any water into the oil. Botulism can grow where there is no oxygen and they must be refrigerated and consumed within a few days as Botulism will grow if left alone for longer periods. I strongly recommend that everyone READ about infusing oils before wrapping a Bow around that cute little bottle 🎀 and giving your friends a ticking time bomb 🧨 this Holiday Season..! 😢
