I’m relieved to see this positive post, instead of another Ichiran hit-piece. 😂
Here’s the thing: there’s absolutely nothing wrong with not liking Ichiran. I don’t doubt that there are better options out there, whether in terms of price or flavour or both. What I can’t quite wrap my head around is the way some people aggressively push their hatred of this particular chain as if they’d suffered some grave personal injury at its hands. It’s all a matter of personal taste, which is as subjective as anything can be, and hardly worth raising a battle-cry to as if it were an objective fact.
My own take. I’ve visited Japan 31 times, travelled to all 47 prefectures by my 18th trip there, tasted ramen and other noodle dishes as far north as Hokkaidō and as far south as Okinawa, and Ichiran’s version of Hakata-style tonkotsu ramen is my favourite Japanese ramen dish by far. Speaking of Japanese noodle dishes more broadly, it shares the top spot with Morioka reimen in my book. This is just my opinion and no more or less valid than anyone else’s, but I’m happy to put it out there and do so without shame.

Ichiran is a marketing company that happens to run ramen shops. Overpriced, they fuck you on noodles (note how OP already has kaedama ready to go), the chashu is bland, and the broth is not anything like Hakata/Fukuoka tonkotsu. I love seeing the 90 min. wait with nothing but foreign tourists in Nishi-Shinjuku. (Turn the corner and you will find multiple locally owned and much better places all around.)

I personally prefer Ippudo. I do love the instant Ichiran and Ippudo. They taste so close to the restaurant but cost much less than going to the restaurant in the States.

I really enjoyed Ichiran on my visit to Japan. I had ramen for lunch and dinner throughout my stay. There are definitely better Ramens out there but Ichiran was yummy, consistent and available everywhere.
Although Melbourne has a couple of decent Ramen shops, I would not complain if Ichiran opened a shop here.

About ten years ago, I used to go there a lot with friends after drinking, but these days it’s just way too crowded to bother.
It’s fine though there are countless ramen shops that are better than Ichiran anyway. Still, seeing this photo makes me want to eat it again for the first time in a while.
