have you ever wondered why fine dining food looks so good sure they use unique and striking ingredients but there’s a reason why this looks way better than this even though they share the exact same ingredients and taste the same well it comes down to the three fundamentals of plating first being negative space essentially the empty space around a subject if I were to ask you to spot this triangle you wouldn’t instantly recognize it but remove the Clutter and replace it with negative space and the triangle becomes instantly obvious the same goes with food with the type of plate you use being the first way to achieve it but more on that later the second fundamental of plating is creating contrast in color pattern and texture making an oil out of your leaks or Waf out of your parmesan changes their composition to create a visually Dynamic final dish so you’ve got some nice ingredients varied in color texture and composition but your meal can still just look like this that’s where the third fundamental comes in heighten layering but like we talked about earlier first some negative space with a smaller portion size and larger plate creating a focal point for the dish then creating height with layers like this oil around the rotto the sculps on top and the wafer and herbs nestled in between not only does this add depth and dimension but it helps accentuate each individual component so their differences in color texture and pattern stand out even more and that’s plating in a nutshell

The fancy plating does say more to the fine dining, but I'd feel much more satisfied getting the other plate. It looks like I'm getting what I paid for in terms of portion size tbh.
Here in Brazil we do not care about that, we are more focus on the BCG: BIG, CHEAP and GOOD!!

A tiny cylinder of food with shit on top objectively looks worse than a plateful of food with a little color and texture variation. The "bad" example looked perfect.
I've never known anyone actually impressed by tiny-baby-sculpture-food. I'd say they're a dime a dozen, but that's how you know your meal's going to cost three times what its worth and won't be filling
Dude, there’s Asian restaurants that have whole tureens of huge dishes that also rely on silhouette and color, using the negative space of the table to make a giant art piece that a whole crowd could enjoy. That’s my style. Asian banquets are a different breed. A super-symphony of food that seems to never end, and linger when it does.
I will be honest, I don't think I would eat those dishes, I pefer Positive space for my meals, and for them to Taste good First and foremost.
I do appreciate the Art, but I will continue making Slop that tastes good.
