Old Texas Elite with Savannah Stoker and pimp my grill racks. Goldees brisket rub. Top rack at 200* overnight starting at 7pm fat side up. 12" & 6" smoke tubes and water pan below. 225* @ 8am, 250* 10am & 300* @11am with foil boat. Pulled at 1:30pm when 205 in flat and 201 in point probe tender. 1 hour rest on counter before wrapping in foil with approx 1 cup tallow. Put boiling water in cooler for 20 mins before wrapping in towels to rest another 2.5 hours. This thing was juicy and exceeded all expectations! My dad grew up in Texas and loved it.

I would start at a higher temp and or a few hours earlier when I do the next to avoid the need for foil boat.
