This seems more of a beet dish than a mackarel dish. Overhead shot might be better for these dark colors. I would also recommend punching out the shaved chioggia beets too. If you take em with the edge of a ring cutter you can make nice crescent moon shapes.

I think it’s beautiful, but also think it would be beautiful (and more obviously a mackerel and beetroot dish) if the mackerel wasn’t dyed beetroot colour. IMO, if you really want to have the mackerel that claret colour, I’d go with only fresh beets that aren’t that colour.
