I was just cooking for my wife and I so took the opportunity to try some new ideas.

First one is based on a coney dog, so chili as the base with mozzarella/cheddar blend, sliced Polish boy sausages (a local sausage that's basically a spicier hot dog), then finished with white onion and a little mustard after the bake.

Second one is caesar dressing base, mozzarella, chopped black pepper bacon and chicken thighs, finished with chives after the bake.

Both were great, my wife liked the idea of putting dressed greens on the Caesar which would be fine, but I liked it as-is too.

65% hydration, 100% King Arthur bread flour, 2 day cold ferment then balled the night before baking.

  1. I really like it! Chili as a sauce base sounds incredible. I actually had an idea for a pizza with a meat sauce/bolenase sauce. This definitely makes me want to try that.

  3. I made one with Skyline and Khan’s hotdogs, a Cincinnati special. I think I used a blend of cheddar and mozzarella. It was really good, but it wrecked me inside.

    I’ve never considered using Ceasar dressing as a base, that sounds good. How were the chicken thighs cooked and cut?
