3 eggs cracked into a skillet. Butter heated and waiting for the eggs. Scrambled and cooked until just a little underdone. Loaded into a bowl and hit with a pinch of Maldon Sea Salt crushed between my thumb and index finger. Looking for a dust consistency. It’s ok for a couple chunks to sneak by. Fresh cracked black pepper next for the final salute. Eat with a buttered sourdough english muffin. YUMMMO.

I salt them while I prepare them to be scrambled, add milk, and give them 10-15 minutes for the salt to stretch the proteins. The salt incorporates evenly, seasoning them throughout (instead of a sprinkle of salt on top) and creates and luxurious texture when they are cooked. Then, and most importantly, a lower heat and shorter cook time. They should still be soft and slightly wet looking when they hit the plate because they’ll continue to cook in their heat.

On top, might put a bit of shredded cheese and a bit of ketchup on the side.

The eggs are the topping. Over easy with warm runny yolks, served over a heap of steaming hash brown potatoes fried crispy with onions and peppers. The taste of the runny yolks soaking into the spicy potatoes is divine.
