    Welp…..you can only get better from here. Most of use when we start cooking or grilling steak did what you did.

    Cooking is a learned skill and sometimes we learn much better from mistakes than successes.

  6. Dust yourself off and get back at it. I’ve messed up more steaks than I’ve cooked well. That can be chopped up with some onions and cheese and made into a bomb sandwich

    You just might be a failure… the only known way to correct this is to buy another steak tomorrow and prove yourself.

    Oh… and the steak has to be a ribeye (patted extremely dry and salted liberally), cooked on a searing hot pan – as hot as it gets – using a high smoke point oil (like avocado), and for just 3 minutes a side.

    It happens. How long did you sear it for? Doing 3-4 mins in each side and this one is done and you could skip the oven.
    Still – delicious with a bit of sauce 🙂

    If all you know how to make is well done steaks, then try it with Wagyu. You need Wagyu to cook more to make sure the fat is rendered. Last thing you want is globs of near lukewarm Wagyu fat.

    It’s so thin that you don’t need to put it in the oven. Sear 3 minutes one side, 2 minutes the other side then stick a temp probe in. Pull it 10 degrees before your preferred doneness and let it sit for 10 minutes.

    Well done steak tastes fine. It isn’t my go to choice, but it’s nothing to beat yourself up over. So long as it’s properly seasoned, you should still be able to enjoy it. Worst case scenario, drown it in HP sauce.
