Hi folks!
Let me show you how I made this delicious tattie & Leek or potato & leek soup ๐Ÿ™‚ Very easy to makeโ€ฆand weโ€™re using the slow cooker! Which makes it even easier. Perfect with warm crusty breadโ€ฆserve with a drizzle of cream, some croutons and a scattering of fresh parsley.

What I used: 3.5 Litre Crockpot

2 Large leeks, washed and sliced
1kg (35 oz) Potatoes (I used Maris Piper) peeled & diced
1/4 Tablespoon dried Oregano
1/2 Tablespoon dried thyme
1/2 Tablespoon dried sage
1/2 Tablespoon rosemary
Salt & pepper to taste
950ml (33.4 oz) Vegetable (or chicken) stock
30g (1 oz) Butter, diced
3 Tablespoons Cream, Greek yogurt or creme fraiche

***Fresh parsley, a drizzle of cream and bread croutons to garnish, optional***

  3. I have to "process" my potatoes before starting the recipe to make them kidney friendly. Your recipe will be perfect for me. I love the richness the little bit of butter and cream adds.   6. Iโ€™d suggest that you add a handful of strong cheddar cheese to the serving bowl so it gradually melts into the soup or cut a thick piece of toast and float that on top of the soup and put the cheese on top of that!

  8. Cheryl – would you please confirm the measurements for the herbs you use? It's written as Tablespoons, but in the video you say a quarter teaspoon of oregano. Looking forward to trying out this soup! Thanks – El

    I made it for months, along with Okroshka, a cold Russian soup back in 2018 when I was very ill with Lyme. I couldn't eat anything hardly. But I could eat this soup and the other.
