For the last few weeks I’ve been starting to make steak much more frequently, and a few weeks ago finally got a Costco Membership to get some USDA Prime.

This is the 3rd strip I’ve made and it is my best work. Wanted to get some notes/feedback.

No before picture unfortunately. Here are the steps:

Dry Brine in Fridge: 27 Hours (12pm – 3pm)

Season: Hardcore Black 4 Hours before cook

Bring to Room Temp: 2 Hr

Oven at 200° – 60 minutes

Out at 115°

Preheat Pan: 20 Mins

Rest 10 Minutes

Sear 60s each side + 50 on Fat

Rest 5 minutes

After searing the first side, did a butter bath with garlic, rosemary, and thyme. Used Hardcore Carnivore Black seasoning.

    Looks great. If you wanna save some time, I’ve seen studies as to where after 30 min out of fridge, the temp of meat doesn’t really increase a lot.

    This is perfect imo, that crust is beautiful. Crust > grill marks.

    Seriously man/lady/other. Don’t use rubs on steaks. Salt and pepper

    Looks great! Only thing I don’t understand, 20 minutes to preheat the pan, are you heating it up using a candle?
