If I have to rearrange the food just to eat it then the plating has failed

You’re colors look great, everything nice and tight on the plate, but don’t ever hide your proteins/star of the dish. Try putting your asparagus, tomatoes, etc. flat on the plate or draped over the mash and the chicken over the top of that so your vegetables don’t roll off the plate and the mash anchors everything down. Also, make sure to have the sauce over the chicken; the plate gets cold faster so your sauce will keep warm while keeping your chicken hot. Finally, finely chop your parsley and sprinkle that over the sauce so it can bloom.

Best of luck! Hope to see more!
