Scallion poached in fatty beef broth, served on the side of pho

Was suggested to post here! I present you the side dish that will blow your mind and up your pho game. Ask for a side of “hanh tran nuoc beo” (read hahn-trunc-nuke-bell) which is fresh scallion poached in the golden liquid of the fatty layer atop a pho pot. Additionally, you can also ask for a side of “hanh dam” (read hahn-yum) which is pickled onion (ADD SRIRACHA). You can chase these in between your pho bites and I promise you will be in heaven.
