    Also this is my favorite cut to order when I go to the local AYCE KBBQ spot.

    Look for a Korean Galbi marinade recipe or you can buy it at a Korean grocery store. Marinate it and grill it for some nice Korean bbq.

    some salt, cook it very hot and aim for medium rare and perfection.

    Marinate for a daaaaaaay. Or as long as you can. High heat cook. Have a water squirm bottle ready for flare ups if cooking on a grill.
    Flip often. 15 minutes

  9. Cut them into 2-3 rib sections. Hard sear them in a high smoke point oil like avocado oil in a Dutch oven. Chop an onion and a handful of garlic and sauté in the oil. Add ribs back and add 4 cups beef broth and a full bottle of red wine. Braise at 300 for 3-4 hours. add chopped carrots and potatoes with 1 hour left.

    kosher salt and pepper ~15 minutes before you grill so the salt penetrates the meat. Add a squeeze of lime right before you take it out and enjoy.

    Marinate in Korean bbq marinade, sear over HOT coals 1 minute per side. Serve with rice and Asian slaw.

  14. Kosher salt, freshly cracked black pepper, cooked over high heat, chopped up for tacos. That’s what I do with that cut when my local Sam’s has them marked down for quick sale.

    Short ribs are a very marbled cut of meat, as they come from the belly/brisket area.

    Bigger cuts are meant to be slow cooked, but this cut like this are, as everyone else mentioned, begging for galbi rib preparation.

    In Texas, I usually get these for $7-8/lb.

    Low and slow or marinate it to make the meat soft. Don’t treat it like a steak.

    Soy sauce,
    Lemongrass,
    Thai ginger,
    Ginger,
    Garlic,
    Sesame oil,
    Gochujang

    Marinate overnight and grill or smoke. I prefer high heat indirect like 350 degrees (best of both worlds) till it looks done. Takes about an hour or so.

    A little kosher salt (like a steak) and sesame seeds/scallion at the end

    The tendons on the rib can be very tough, so you need to marinade it using fruit juices that Koreans use to tenderize it. Korean recipes usually contain Asian pear juice, kiwi (I know this us not their local fruit) but be careful because too much and too long will make your meat break apart. The rest are sugar, soy sauce, garlic powder, korean molasses or whatever sweet you prefer, onion powder, pepper, etc. Make the sauce, taste it, make adjustments to your liking, pour it on the meat, let it rest a few hours to a few days, the cook it quickly, because it can get dry.

    rub with oil, sprinkle generously with kosher salt, right onto the grill and char it. Hawaiians call that “pulehu style” (poo-lay-hoo) and it’s incredible.

    I’ll leave my original comment up there, but add this edit: the marbling you’ve got there is good enough that you can probably skip the oil rub if you want.

    Galbi marinade overnight, cut into individual pieces, throw in the air-fryer until the fire alarm starts to ring.

  23. I marinate these in some Bachan’s overnight and grill. Just keep flipping them over hot coals. Serve with rice and a cucumber salad, so tasty.

    I use teriyaki marinade by Kinders and then throw it on the grill. No regrets.

  27. well done is fine for Beef rib. Dont overcook for tool long.
    I like KBBQ way but a little ticker Argentinian way is amazing too.

    These fatty cuts lose fat so fast once they hit certain temp.
