i found this beautiful ribeye by the Turkish butcher and i had to sacrifice a huge portion of my monthly budget (7€) to have a nice dinner. dry brined with salt and vegeta. turned out extremely delicious (also reverse seared a little bit because it was frozen, only until 40° internal temperature)

    Post cook only great if you like it blue. 

    Needed to warm up first and then cook the same way.

  5. Understandable if you like completely raw meat with a bit of crust, but have you considered trying out rare, or even medium rare?

    Glad you enjoyed it but that is definitely considered blue, not rare or medium rare.

    This is raw on the inside. You can tell because the fat isn’t remotely rendered. You should never cook a frozen steak. You should let it thaw and get to room temp before you cook. On the plus side, the sear looks nice. I just feel bad that you spent so much of your budget on it, but as long as you liked it that’s what is important

    Great job on the sear it looks like.

    You were probably too hungry at that point but allowing the steak to actually thaw out would allow the insides to actually cook.

    Also, 40° just isn’t cooked. Thats like hot tap water temp.

    No rendered fat and no heat passed whatsoever through the middle of the steak. This is definitely blue if not completely raw.

    Nice steak, but you cooked if frozen?? Also, dry brine won’t work if it’s frozen
