Found this nicely sized (0.58 kg) ribeye for a pretty good price, salt and pepper, then up to 46 deg C at 120 deg C oven, finished with searing on cast iron! I’m pretty happy with the price/value ratio I got.

    No matter how many different ways I try it, I can never get this leveled of blackened char type sear without burning the seasoning. I’ve gotten the base lighter color sear down pretty good, but this still eludes me.
