Recently got a grill so this was one of the first stakes I ever grilled. Was shooting for a medium rare.

    You want a crust, not just grill marks

    grill marks are fine if they’re on a crust, but otherwise you only have lines of crust on grey meat

    Can be make inverse grill markets by using a sous vide then blow torching the steak on a grill haha

    Get a carbon steel pan for the best seer. Develops the best crust. I prefer steel over cast iron because I’ve found my cast iron to not heat as evenly as my steel pan.

    Honestly- that looks great- fuck everyone with this whole crust stuff- even if you had a great crust someone would talk shit. You posted something online with a bunch of know it alls that can’t do better but will talk shit. You made steak, the temp looks awesome, if you ate it and enjoyed it then mission accomplished.

    crosshatches are old school for a reason. You’re leaving flavor out of it by not getting a crust on the whole thing. Very good cook for what you were going for. That’s a classic steakhouse type cook done perfectly. It’s just not what most people want these days.
