Risotto shouldn’t stand, sorry. It should look like you need a spoon (but you don’t). Make it looser and try again.

I’d start out by not pairing yellowtail with a mushroom risotto; don’t get me started on the plating or the risotto, whilst there’s obviously some variation, the standard cook is all’onda.
